بررسی مقایسه ای اثر آنتی اکسیدانی گل گاو زبان، گل بابونه و برگ های چای سبز و سیاه بر فتواکسایش اولئیک اسید با استفاده از کمپلکس های پورفیرینی محلول در آب به عنوان کاتالیزگر

چکیده

فتواکسیداسیون لیپیدها فرایند شیمیایی نامطلوبی است که درآن اسیدهای چرب ضروری به وسیله گونه ی فعال اکسیژن یگانه به پراکسید تبدیل می شوند. در این مطالعه از عصاره های آبی برگهای چای سبز و سیاه Camellia sinensis (L.) O. Kuntze ، گل بابونه Chamaemelum nobile (L.) All و گل گاوزبان ایرانیEchium amoenum Fisch and C.A. Mey که به ترتیب از رویشگاههای طبیعی لاهیجان، شیراز و پارک ملی گلستان جمع آوری شده بودند جهت جلوگیری از تبدیل اولئیک اسید به پراکسید استفاده شد. عصاره های آبی مورد نظر به روش خیساندن (maceration) استخراج شد. تولید اکسیژن یگانه و محصولات پراکسیدی در حضور فتوکاتالیزگرH2TCPP (مزو-تترا کربوکسی فنیل پورفیرین) و نور به وسیله روش های طیف سنجی1H NMR ، طیف سنجیUV-Vis و تیتراسیون یدومتری اثبات شد. نتایج آنتی اکسیدانی این گیاهان نشان داد که به ترتیب عصاره های آبی گل گاوزبان، برگ چای سیاه و سبز و سپس گل بابونه توانستند به میزان 75/42، 34/38، 98/36 و51/33 درصد از تبدیل فتواکسیداسیونی اولئیک اسید به پراکسید جلوگیری کنند. این در حالی است که این مقدار بازدارندگی در تبدیل اولئیک اسید به پراکسید برای آنتی اکسیدان شیمیایی اسید اسکوربیک 32/20 درصد به دست آمد. همچنین نتایج این پژوهش نشان داد که خاصیت آنتی اکسیدانی گل گاوزبان ایرانی در حلال های آلی استونیتریل، اتانول و متانول حفظ می شود.

Lipid photooxidation is the undesirable chemical process in which singlet oxygen result in the peroxidation of fatty acids. In this study leaves aqueous extract of Camellia sinensis (L.) O. Kuntze and flower extracts of Chamaemelum nobile (L.) All and Echium amoenum Fisch and C.A. Mey collected from natural habitats in Lahijan, Shiraz and Golestan National Park, respectively. Aqueous extracts were extracted using maceration method. Generation of singlet oxygen and peroxide products in the presence of H2TCPP (meso-tetra-carboxy phenyl porphyrin) were proved by 1H NMR spectroscopy, UV-Vis spectroscopy and iodometric titration method. Aqueous extract of Echium amoenum Fisch and C.A. Mey flowers, aqueous extract of Camellia sinensis (L.) O. Kuntze leaves, aqueous extract of Chamaemelum nobile (L.) flowers and Ascorbic acid as a chemical antioxidant indicated an inhibition of 42.75%, 38.34%, 36.98%, 33.51% and 20.32% on peroxidation of oleic acid, respectively. The results of this study also showed that the antioxidant activity of Echium amoenum Fisch and C.A. Mey in organic solvents such as acetonitrile, ethanol and methanol solvents are maintained.
