بررسی اثر بسته‌بندی فعال زیست‌تخریب‌پذیر بر پایه زئین حاوی اسانس آویشن شیرازی بر عمر پس از برداشت توت‌فرنگی

چکیده

سالیانه بخش زیادی از محصول توت‌فرنگی تولیدی در اثر فساد پس از برداشت از بین میرود. از سوی دیگر، تقاضا برای مواد بسته بندی سازگار با محیط‌زیست به علت نگرانی های محیط‌زیستی در رابطه با استفاده از پلیمرهای نفتی به‌شدت افزایش یافته است. بنابراین، مواد بسته بندی مبتنی بر بیوپلیمرها پتانسیل بالایی را برای جایگزینی با پلاستیکهای نفتی دارند. همچنین پژوهشها نشان داده است که اسانس‌های گیاهی امکان کنترل بیماری‌های پس از برداشت محصولات کشاورزی را فراهم میکنند. اما استفاده از آنها به دلیل ناپایداریهای فیزیکی و شیمیایی و ایجاد بو و مزه در محصول با دشواری‌هایی همراه است. یکی از بهترین روشها برای مرتفع ساختن این مشکل، گنجاندن اسانس در فیلم بسته بندی است. لذا پژوهش حاضر با هدف بررسی اثر فیلم زیست‌تخریب‌پذیر بر پایه زئین حاوی اسانس آویشن شیرازی (با غلظت های 0، 5، 10 و 20% وزنی/وزنی) به عنوان یک بسته بندی فعال به منظور افزایش عمر پس از برداشت میوه توت فرنگی صورت گرفت. اثر فیلمها بر حفظ خواص کیفی توت‌فرنگی طی 15 روز نگهداری در دمای °C4 مورد بررسی و میزان تغییرات کیفی نمونه ها (وزن، سفتی، مواد جامد محلول، pH، اسیدیته قابل تیتراسیون، ویتامین ث و میزان آلودگی میکروبی) طی این مدت مورد ارزیابی قرار گرفت. نتایج این بررسی نشان داد که در طول دوره نگهداری، کیفیت نمونه ها کاهش یافت اما روند کاهش در نمونه های بسته‌بندی‌شده بسیار کم تر از نمونه های بسته بندی نشده بود. همچنین افزودن اسانس به فیلم پلیمری موجب حفظ بهتر خواص کیفی توت فرنگی شد و با افزایش غلظت اسانس کاهش کیفیت نمونه های توت‌فرنگی روند کندتری یافت. لذا به نظر می رسد که میتوان با استفاده از فیلم زیست‌تخریب‌پذیر زئین حاوی اسانس آویشن شیرازی به عنوان یک بسته بندی فعال ضایعات پس از برداشت توت‌فرنگی را حد بسیار زیادی کاهش داد

تازه های تحقیق

  • فیلم­های زیست تخریب زئین حاوی غلظت­های مختلف اسانس آویشن شیرازی سنتز و پتانسیل آنها در افزایش ماندگاری توت­فرنگی بررسی شد.
  • میزان کاهش وزن، سفتی، مواد جامد محلول، pH، اسیدیته قابل تیتراسیون، ویتامین ث و میزان آلودگی میکروبی نمونه­های توت‌فرنگی طی 15 روز نگهداری مورد ارزیابی قرار گرفت.
  • بکارگیری از فیلم­های فعال زئین حاوی اسانس آویشن شیرازی توانست کیفیت توت فرنگی را در طی دوره نگه­داری حفظ کند.

Every year, a large part of the Produced strawberries is losses due to postharvest corruption. On the other hand, the demand for Biodegradable packaging materials has increased sharply due to environmental concerns about the use of petroleum polymers. Therefore, biopolymer-based packaging materials have a high potential for replacement with petroleum plastics. Research has also shown that plant essential oils can control postharvest diseases of agricultural products. However, their use is associated with difficulties due to physical and chemical instabilities odors and taste in the product. One of the best way to solve this problems is to include essential oils in the packaging film. Therefore, the present study aimed to investigate the effect of biodegradable film based on Zein containing Zataria multiflora essential oil (with concentrations of 0, 5, 10 and 20% w/w) as an active packaging to increase the Postharvest shelf life of strawberry fruit. The effect of films on maintaining the quality properties of strawberries during 15 days of storage at 4°C was evaluated and the amount of changes in weight, firmness, soluble solids, pH, treatable acidity, vitamin C and microbial contamination of strawberry samples during this period were evaluated. The results showed that during the storage, the quality of the samples decreased but the decreasing trend in packaged samples was much less than unpackaged samples. Also, the addition of essential oil to the polymer film improved the quality properties of strawberries, and with increasing the concentration of essential oil, the quality of strawberry samples decreased. Therefore, it seems that it is possible to greatly reduce the waste after harvest of strawberries by using the biodegradable film of saddle containing Zataria multiflora essential oil as an active packaging.
