اثر دمای هوای ورودی و میزان مالتودکسترین بر ویژگی‌های فیزیکی شیمیایی پودر شیره خرمای خشک شده به روش پاششی

چکیده

در این مطالعه، اثر نسبت­های وزنی مالتودکسترین (به عنوان حامل و عامل خشک کردن) به شیره خرما (30:70، 40:60، 50:50 و 60:40) و دمای هوای ورودی (140، 160 و C˚180) بر آزمون­های مختلف شامل: بازده تولید پودر، ویژگی­های پودرهای بدست آمده (مقدار رطوبت، فعالیت آبی، دانسیته توده و ضربه، انحلال­پذیری، نم­پذیری و جاذب­الرطوبگی)، رفتار جریان­پذیری (شاخص تراکم­پذیری، نسبت هاسنر و زاویه ریپوز) و نهایتاً، ویژگی­های ریزساختاری پودرها با میکروسکوپ الکترونی مورد بررسی قرار گرفت. در همه آزمون­ها، دور اتمایزر، سرعت جریان خوراک، دمای خوراک و فشار هوای اتمایزر به ترتیب در rpm18000، ml/min15، C˚1±30 و 1/0±2/4 بار ثابت نگه داشته شدند. حداقل اختلاف معنی­دار بین میانگین­ها در کمتر از (P

In this study, the influence of maltodextrin weight ratios (as a carrier and drying agent) to date palm syrup (30:70, 40:60, 50:50 and 60:40) and inlet air temperature (140, 160 and 180˚C) on the different tests such as: powder production yield, powder properties (moisture content, water activity, bulk and tapped density, solubility, wettability, hygroscopicity), flowability behavior (carr index, hausner ratio and angle of repose) and finally, microstructural properties were studied. In all experiments, atomizer rotational speed, feed flow rate, feed temperature and atomizer air pressure were kept constant at 18000 rpm, 15 ml/min, 30±1˚C and 4.2±0.1bar, respectively.
