بررسی متغیرهای فرآیندی در چاپ سه بعدی شکلات
فناوری ساخت افزایشی به روش سرنگی یکی از روشهای شکلدهی قطعات است که به دلیل طراحی و زمان کم تولید توجه بسیاری از صنعتگران و محققان را جلب کرده است. در این روش مواد مختلف از قبیل پلیمری، غذایی، فلزی و ... توسط یک سرنگ که توسط مکانیزم سی ان سی کنترل میشود، به صورت رشتههایی نازک در کنار هم قرار میگیرند تا مقطعی از قطعه ساخته شود. با تکرار این فرآیند برای لایههای بعدی، قطعه نهایی ساخته میشود. در این پروژه سعی بر این بوده تا قطعات شکلات به شکلهای دلخواه با این فناوری ساخته شود. برای این منظور از زیرساخت یک چاپگر سه بعدی تجاری که به یک کلگی سرنگی طراحی شدهی خاص با دمای قابل تنظیم مجهز شده بود، استفاده شد. آزمون DSC نشان داد که محدوده دمایی مناسب برای ذوب شکلات،°C۳۲-۴۰ است. آزمون ریولوژی نشان داد که با افزایش دما، گرانروی شکلات کاهش مییابد و افزایش گرانروی منجر به بیشتر اکسترود شدن شکلات شده، وضوح شکل چاپ شده را کم میکند. از طرف دیگر پارامترهای فرآیندی نظیر ارتفاع نازل از صفحه چاپ، قطر نازل، قطر فیلامنت و دمای صفحه ساخت نیز بر وضوح چاپ موثر است. در این تحقیق قطرهای مختلف تنظیمی نازل در نرمافزار چاپmm 98/1، 2 و 3 در دماهای مختلف مورد بررسی قرار گرفت و در نهایت شرایطی که در آن دقت چاپ مطلوب است تعیین شد که عبارتند از دمای °C32، ارتفاع برابر با قطر، قطر نازل تنظیمی mm 98/1 و دمای صفحه ساخت کمتر از °C10.

فیلم ها و پوشش های حاوی میکروارگانیسم های پروبیوتیک: رویکردی جدید جهت تولید فراورده های پروبیوتیک
پروبیوتیکها میکروارگانیسمهای زندهای هستند که مصرف کافی آنها منجر به بروز اثرات سلامتی بخش در میزبان میگردد. با توجه به افزایش آگاهی مردم و تغییر سبک زندگی آنها در سالهای اخیر تمایل به مصرف فراورده های پروبیوتیک در سراسر جهان افزایش یافته است. تولید فراوردههای غذایی پروبیوتیک با چالشهایی مواجه است زیرا تعداد قابل توجهی از میکرارگانیسم-های پروبیوتیک در طول فرایندهای مختلف از مرحله تولید تا نگهداری موادغذایی و همچنین در طی تعامل با ترکیبات ماده غذایی غیر فعال میشوند. علاوه بر این، تجزیه و عبور مواد غذایی از دستگاه گوارش نیز میتواند بر زندهمانی پروبیوتیکها موثر باشد. بنابراین حفظ جمعیت زنده میکروارگانیسمهای پروبیوتیک به میزان کافی (>cfu/ml or g 106 ( تا زمان مصرف فراوردهها، باید مد نظر تولیدکنندگان قرار گیرد. به دام انداختن میکروارگانیسمهای پروبیوتیک در بستر پلیمری فیلمها و پوششها رویکرد نوینی است که در دهه اخیر جهت تولید فیلمهای زیست فعال با خواص ضدمیکروبی و سلامتی بخش به منظور ارائه فراوردههای جدید غیرلبنی پروبیوتیک مطرح شده است. هدف از این مطالعه مروری، بررسی پژوهشهایی است که تاکنون در زمینه فیلمها و پوششهای پروبیوتیک انجام گرفته است تا با توجه به نتایج حاصل از آنها زمینه تحقیقات بیشتر در آینده فراهم شود.

ارزیابی اثر پیشتیمار ضدعفونی و اتمسفر نسبی دیاکسید کربن بر ویژگیهای فیزیکوشیمیایی و میکروبی زرشک تازه در طول دوره انبارداری
هدف از این پژوهش بررسی اثر اتمسفر CO2 و پیشتیمار ضدعفونیکردن بر ویژگیهای فیزیکوشیمیایی زرشک تازه بود. بدین-منظور پس از حذف شاخ و برگ، بخشی از میوههای زرشک در بستههایی از جنس LDPE/PET به ضخامت 45 میکرون و تحت اتمسفر CO2 (نمونه CD) بستهبندی شدند. بخشی دیگر از میوهها ابتدا با محلول تجاری ضدعفونی شده و سپس تحت اتمسفر طبیعی (نمونه D) و یا تحت اتمسفر CO2 (نمونه CDD) بستهبندی شدند. میوههای زرشک بستهبندی شده بدون ضدعفونی کردن و تحت اتمسفر طبیعی به عنوان شاهد (نمونه C) در نظر گرفته شدند. نتایج بیانگر به ترتیب کاهش و افزایش میزان O2 و CO2 در داخل بستههای با اتمسفر طبیعی همگام با افزایش طول دوره ماندگاری بود در حالیکه در بستههای CD و CDD مقدار CO2 داخل بسته طی دوره انبارداری کاهش یافت. در پایان 28 روز نگهداری افت رطوبت و افت وزنی در نمونههای CD و CDD بیش از سایر نمونهها به ویژه در دمای 25 درجه سانتیگراد بود در حالیکه اسیدیته در این نمونهها افزایش یافت. در پایان 28 روز نگهداری در دمای 4 درجه سانتیگراد کمترین محتوای آنتوسیانین، ترکیبات فنلی، اسید اسکوربیک، درصد مهار رادیکال DPPH و قدرت احیاءکنندگی آهن به ترتیب به نمونههای CDD، D، CDD، D و D مربوط بود که به ترتیب 6/40، 6/46، 4/58، 6/51 و 60 درصد افت را نسبت به زمان برداشت نشان دادند. کمترین مقدار ترکیبات فوق در دمای 25 درجه سانتیگراد به ترتیب به نمونه-های CDD، CD، CDD، CD و D مربوط بود که به ترتیب 2/48، 8/34، 8/73، 7/55 و 6/63 درصد افت را نسبت به زمان برداشت به نمایش گذاشتند. در پایان دوره نگهداری، کمترین سفتی و بیشترین آسیبدیدیگی قارچی به نمونه CDD مربوط بود. به نظر میرسد که اتمسفر CO2 از توانایی مناسبی برای حفظ کیفیت زرشک تازه برخوردار نبوده و پیشتیمار ضدعفونیکردن شرایط نامساعد را تشدید کرد.

بررسی پیش فرایندبرگ چای سیاه با امواج میکروویو و فراصوت برای استخراج ترکیبات موثره
در مطالعه حاضر اثر دو روش پیش فرآیند شامل تابشدهی با امواج میکروویو و فراصوت، بر درصد وزنی بازدهی استخراج ترکیبات موثره از نمونه پودر برگ چای سیاه (Camelia Sinensis) در روش استخراج متوالی با حلال طی سه مرحله استخراج با آب مقطر مقایسه شد. حداکثر درصد بازدهی استخراج از نمونه چای پیش فرآیند نشده، در استخراج متوالی با حلال در شرایط بهینه (مدت زمان min 135، دمای °C65 و نسبت حلال به جامد ml/g 25) مقدار w/w28/0±53/24% بدست آمد. در پیش فرآیند با امواج میکروویو، نمونه پودر برگ چای بعد از min80 خیساندن در آب مقطر در دمای محیط، min1 با امواج میکروویو در توان w 600 مورد تابشدهی قرار گرفت. حداکثر درصد بازدهی از این نمونه توسط روش استخراج متوالی با حلال در شرایط بهینه (زمان min 90، دمای °C40 و نسبت حلال به جامد ml/g 20) w/w34/0±06/37% بدست آمد. در پیش فرآیند با امواج فراصوت، نمونه پودر برگ چای در یک شرایط متوسط (مدت زمان min 10 در شدت امواج 70% و پالس s 7/0) با امواج فراصوت مورد تابشدهی قرار گرفت. حداکثر درصد بازدهی از این نمونه توسط روش استخراج متوالی با حلال در شرایط بهینه (زمان min 108، دمای °C 55 و نسبت حلال به جامد ml/g 18) مقدار w/w38/0±47/31% بدست آمد. هر دو روش پیش فرآیند، تاثیر به سزایی در افزایش درصد بازدهی و متعادل کردن شرایط در استخراج متوالی با حلال داشتند ضمن اینکه پیش فرآیند با امواج میکروویو موثرتر از پیش فرآیند با امواج فراصوت بود. درصد بازدهی (w/w 19/0±15/37%) در روش سوکسله در شرایط بهینه (h 5 ساعت استخراج در دمای جوش آب) نزدیک به مقادیر بدست آمده در روشهای ترکیبی بود اما مقدار ترکیبات فنولی کل و ایزوفلاونوئیدی در عصاره حاصل به روش سوکسله از مقدار آن در عصارههای بدست آمده با روشهای بررسی شده در این مطالعه کمتر بود.

بررسی رفتار رئولوژیکی وابسته به زمان (تیکسوتروپ) صمغ دانه مرو در حضور برخی نمکها و قندها
< p>در این تحقیق، رفتار رئولوژیکی وابسته به زمان (تیکسوتروپ) محلولهای صمغ دانه مرو در حضور نمکهای کلرید سدیم و کلرید کلسیم در غلظتهای مختلف (0، 10، 50 و 100 mM) و همچنین قندهای گلوکز و ساکارز در غلظتهای مختلف (0%، 2%، 4% و 6%)، در سرعتهای برش مختلف (10، 25 و 50 s-1) مورد بررسی قرار گرفت. محلولهای صمغ دانه مرو در تمام شرایط مورد آزمایش رفتار تیکسوتروپ از خود نشان دادند. دادههای بدست آمده از آزمونهای رئولوژیکی به خوبی با مدلهای سینتیک ساختار درجه دوم برای محلولهای نمکی (987/0-918/0 R2=و 017/0-003/0RMSE=) و مدل ولتمن برای محلولهای قندی (993/0-921/0 R2= و 020/0-003/0RMSE=) صمغ دانه مرو برازش یافتند. مقادیر سرعت شکست ساختار (k) و میزان شکست ساختار (0/) بدست آمده برای محلولهای صمغ دانه مرو در حضور نمک کلرید کلسیم به ترتیب بیشتر و کمتر از مقادیر بدست آمده در حضور نمک کلرید سدیم بود. در میان محلولهای نمکی، محلول صمغ دانه مرو در حضور mM10 کلرید سدیم دارای بالاترین مقادیر تنش برشی اولیه و ضریب زمان شکست تیکسوتروپ بود. ضریب سفتی زنجیره (S) صمغ دانه مرو در حضور یون دوظرفیتی Ca2+ ( M0.5.Pa.s4-10×12 -4-10×8) بیشتر از یون تک ظرفیتی Na+ ( M0.5.Pa.s4-10×8 -4-10×6) تعیین شد. در مورد محلولهای قندی صمغ دانه مرو، بالاترین مقدار k در حضور قند ساکارز مشاهده گردید و پارامتر میزان شکست ساختار با افزایش سرعت برش کاهش یافت. غلظت قندهای مورد آزمایش به ترتیب دارای یک اثر مستقیم و غیرمستقیم بر پارامترهای تنش برشی اولیه و ضریب زمان شکست تیکسوتروپ بود. نتایج این پژوهش به خوبی نشان داد که رفتار تیکسوتروپ صمغ دانه مرو به طور چشمگیری تحت تاثیر حضور یونها و مولکولهای قندی است، که این مساله در فرآیند تولید محصولات غذایی باید مورد توجه قرار گیرد.

تهیه پودر زرشک تولیدی به روش کفپوشی و اثر دمای خشک کن بر ویژگیهای آن
هدف از این مطالعه دستیابی به کف آب زرشک با حداقل دانسیته و حداکثر پایداری کف با استفاده از صمغ دانه ریحان بود. به منظور اجرای پژوهش، ابتدا جهت تولید کف، آب زرشک تهیه و صمغ دانه ریحان استخراج شد. سپس کف حاصل با استفاده از صمغ دانه ریحان به عنوان پایدارکننده در سطوح 0، 1/0 و 3/0%، عامل کفزای پودر سفیده تخم مرغ در سطوح 5/0، 1 و 5/1 درصد در دمای ºC 50 تهیه شد. بر اساس قابلیت تشکیل کف و پایداری کف تشکیل شده، غلظت بهینه 5/1 و 3/0 درصد به ترتیب برای سفیده تخم مرغ و صمغ دانه ریحان بدست آمد. در فرایند خشک کردن با هوای داغ، اثر دمای 50، 60 و 0C70 بر حلالیت، ظرفیت جذب آب، رنگ، دانسیته توده، فعالیت آبی و FTIR کف در غلظت بهینه پودر سفیده تخم مرغ و صمغ دانه ریحان با ضخامت mm5 مورد بررسی قرار گرفت. نتایج آنالیز واریانس نشان داد که با افزایش دمای خشک کردن حلالیت و روشنی پودر تولیدی به طور معنیداری افزایش یافت، در حالی که ظرفیت جذب آب، دانسیته توده و فعالیت آبی روند کاهشی نشان داد و تغییر ساختاری در پیک تیمارهای FTIR ایجاد نکرد. با توجه به نتایج پژوهش، از صمغ دانه ریحان میتوان برای بهبود پایداری کف در محصولات غذایی حاوی آلبومین سفیده تخم مرغ استفاده نمود.

بهینهسازی پوشش خوراکی بر پایه نشاسته سیبزمینی اصلاح شده و روغن سبوس برنج و بررسی تأثیر آن بر ماندگاری انگور رقم عسگری
استفاده از پوششهای خوراکی روشی برای حفظ و نگهداری میوهها و محصولات کشاورزی به شمار میآید. پوششهای خوراکی با کاهش شدت تنفس میوهها، ماندگاری آنها را به صورت چشمگیری افزایش و میزان ضایعات را کاهش میدهند. هدف از این پژوهش، بهینهیابی تولید پوشش خوراکی برای نگهداری طولانیمدت "انگور" (گونه عسگری به دلیل فسادپذیری بالا و فراوانی زیاد) توسط روش سطح پاسخ (RSM) و طرح عرف بهینه میباشد. از غلظتهای مختلف نشاسته سیبزمینی استیله شده (3, 5 and 7 gr) و روغن سبوس برنج (0, 0.5, 1, 1.5 and 2 gr) جهت تولید پوشش بهره گرفته شد. همه نمونهها تحت سرعتهای مختلف اولتراتورکس (7, 14.5 and 22 rpm) هموژن گشتند. پارامترهای افت وزن میوه، پایداری و aw پوشش به عنوان پاسخهای طرح آزمایشی در نظر گرفته شدند. تیمارها (20 نمونه در2 تکرار) در سردخانهای با دمای °С 4 و رطوبت 70 % به مدت 28 روز ذخیرهسازی شدند. پارامترهای کیفی انگور شامل TSS، TA، pH، بافت و افت وزن هر 2 هفته مورد بررسی قرار گرفتند. همچنین میزان حبههای کپکزده در پایان دوره انبارداری محاسبه گردید. مدلهای توسعهیافته مربوط به افت وزن نمونهها، پایداری و awژل امولسیونی پیشبینی کردند که بهرهگیری از 2 % روغن سبوس برنج، 57/6 % نشاسته سیبزمینی استیله شده و سرعت هموژن کردن 7 rpm، منجر به ایجاد ژل امولسیونی با بیشترین پایداری (6/93 %) و کمترین aw (77/0) میشود.

پیاده سازی یک سامانه پرتابل زبان الکترونیک به منظور تشخیص تقلب بنزوات سدیم در رب گوجهفرنگی
< p>رب گوجهفرنگی از جمله مهمترین چاشنیها در مواد غذایی محسوب میشود به طوری که پایش کیفیت و امنیت غذایی در این محصول پر مصرف از اهمیت بالایی برخودار است. در این پژوهش، یک سامانه قابل حمل زبان الکترونیک مشتمل بر آرایهای از حسگرهای الکتروشیمیایی بر پایه الکترود مغز مداد گرافیتی به منظور تشخیص تقلب بنزوات سدیم در رب گوجهفرنگی، پیاده سازی شد. برای ایجاد تقلب در رب گوجهفرنگی، بنزوات سدیم در مقادیر مختلف (20، 60 و 100 میکرولیتر) به رب گوجهفرنگی طبیعی عاری از بنزوات سدیم اضافه گردید. در فرایند اندازهگیری، از تکنیک ولتامتری چرخهای با محدوده پتانسیل 0 تا 1 ولت جهت شناسایی بنزوات سدیم استفاده شد. نتایج نشان داد که 7=pH برای بافر فسفات که به عنوان شناساگر بنزوات سدیم مورد استفاده قرار گرفت، pH بهینه است. همچنین گرافن بهترین عملکرد را به عنوان اصلاحگر سطح الکترود مغز مداد گرافیتی برای تشخیص میزان بنزوات سدیم نسبت به دو اصلاح گر نانوذرات طلا و نانوذرات مغناطیسی از خود نشان داد. نتایجی که از طریق طبقهبندی نمونهها حاصل شد، قابلیت بالای سامانه زبان الکترونیک را در تشخیص و تمایز تقلب بنزوات سدیم در رب گوجهفرنگی نشان داد. با توجه به نتایج بدست آمده سامانه حسگری سه الکترودی مورد استفاده در این پژوهش شامل الکترود کاری مغز مداد گرافیتی، الکترود مرجع نقره/نقره کلرید و الکترود کمکی پلاتین قابلیت بالایی در تشخیص بنزوات سدیم موجود در رب گوجه فرنگی دارد.
