مقایسه مدل ریاضی و شبکه عصبی مصنوعی در تخمین نسبت رطوبت برشهای پرتقال طی فرآیند خشکشدن
در تحقیق حاضر، خشککردن لایه نازک برشهای پرتقال در خشککن هوای داغ آزمایشگاهی مدلسازی گردید. فرایند خشککردن تحت شرایط متفاوت، سه دمای 50، 60 و 70 C° و سرعت جابهجایی هوای 0/1و 0/2 m/s انجام شد. آنالیز آماری دادهها نشان داد که تغییرات دما و سرعت جابهجایی هوا بر روی نسبت رطوبت اثرات معنیداری 05/0>p داشته، اما اثر متقابل دما و سرعت جابهجایی هوا، اثر معنیدار نداشته است. بنابر نتایج حاصل، کمترین نسبت رطوبت در برشهای پرتقال خشک شده تحت دمای 70 C° و سرعت جابهجایی هوای0/2 m/s بهمیزان 3/5% بهدست آمد. پس از انجام آزمایشها، دادههای حاصل از آزمایشهای خشککردن با 7 مدل شناختهشده ریاضی برازش داده شد. بر اساس نتایج برازش، مدل پیج با بالاترین مقدار ضریب تعیین 9992/0R2= و 3-10×71/2=RMSE در مقایسه با سایر مدلها عملکرد بهتری در برآورد نسبت رطوبت، نشان داد. همچنین، از مدل شبکه عصبی مصنوعی پسانتشار پیشخور برای تخمین نسبت رطوبت برشهای پرتقال بر اساس سه متغیر ورودی مدت زمان خشککردن، دما و سرعت جابهجایی هوا استفاده شد. در طراحی این شبکه از دو تابع آستانه تانژانت هیپربولیک و خطی در لایه پنهان و خروجی استفاده گردید. شبکه عصبی طراحی شده با توپولوژی 1-20-3 و الگوریتم آموزشی لونبرگ-مارکوات بهترین نتایج را با بالاترین مقدار ضریب تعیین 9994/0R2= و کمترین مقدار ریشه مجذور خطا 3-10×009/1=RMSE ارائه داد. نتایج نشان داد که شبکه عصبی پرسپترون چند لایه، دارای دقت بالاتری در تخمین نسبت رطوبت برشهای پرتقال طی فرایند خشکشدن است.

سینتیک خشک کردن مادون قرمز برش های میوه به و مدلسازی آن با روش الگوریتم ژنتیک-شبکههای عصبی مصنوعی
در این تحقیق جهت خشک کردن برش های میوه به از روش پرتودهی مادون قرمز استفاده شد. برای این منظور اثر دمای خشک کردن 50، 60، 70 و 80 درجه سانتیگراد که ناشی از توان های به ترتیب 51، 73، 98 و 125 وات لامپ مادون قرمز بود مورد مطالعه قرار گرفت. نتایج بدست آمده نشان دادند که با افزایش دما سرعت خشک کردن افزایش می یابد. با افزایش دما از 50 به 80 درجه سانتیگراد زمان خشک کردن حدود 60 درصد کاهش یافت. با اعمال توان های مختلف برای لامپ مادون قرمز از 51 وات تا 125 وات، مقدار رطوبت از 453 درصد (بر مبنای خشک) به 16 درصد (بر مبنای خشک) کاهش داده شد. مدلسازی فرایند خشک کردن به روش الگوریتم ژنتیک-شبکههای عصبی مصنوعی (GA-ANNs) با 3 ورودی (زمان خشک کردن، دمای خشک کردن و دمای مرکز برش) و یک خروجی (میزان نسبت رطوبتی (MR)( انجام شد. نتایج مدلسازی نشان داد شبکه ای با تعداد 7 نرون در یک لایه پنهان و با استفاده از تابع انتقال تانژانت هایپربولیک می تواند درصد رطوبت در طی فرایند خشک کردن را با دقت بالایی پیشگویی کند (9997/ 0 R2 =و 0044/0RMSE =). بر اساس نتایج، دقت تخمین بدست آمده برای شبکه بهینه بالاتر از بهترین مدل تجربی (مدل میدیلی) در تمام دماهای مورد آزمایش بود (9994/0-9987/0 R2 =و 0098/0-0068/0 RMSE =). نتایج آنالیز حساسیت توسط شبکه عصبی بهینه نشان داد که به دلیل حساسیت بالاتر (0044/0)، دمای مرکز برش های میوه به موثرترین عامل در کنترل میزان نسبت رطوبتی می باشد. افزایش دما از 50 به 80 درجه سانتیگراد سبب افزایش ضریب انتشار موثر (Deff) از 9-10×8/10 به 9-10×1/26 مترمربع بر ثانیه گردید. مقدار انرژی فعالسازی برای برش های میوه به، 68/28 کیلوژول بر مول تعیین شد.

ارزیابی ویژگی های فیزیکوشیمیایی و عملکردی نشاسته مقاوم ذرت حاصل از روش اتوکلاو
نشاسته مقاوم به هضم (RS) به بخشی از نشاسته اطلاق می شود که پس از 120 دقیقه انکوباسیون در برابر آنزیم های هضم کننده مانند آنزیم آلفا آمیلاز بدون تغییر و هضم نشده باقی می ماند. در میان انواع نشاسته مقاوم، نشاسته مقاوم نوع 3 به علت پایداری حرارتی آن در طی فرایند حرارتی مواد غذایی مورد توجه بیشتری قرار گرفته است. به منظور تولید نشاسته مقاوم نوع 3، ساختار گرانولی نشاسته باید توسط حرارت و در حضور آب کافی تخریب شده و در ادامه زنجیره های آمیلوز پس از سرد کردن مجددا به یکدیگر متصل گردند. اتوکلاو نمودن محصولات بر پایه نشاسته منجر به پسروی و در نتیجه افزایش میزان نشاسته مقاوم می گردد. هدف از این مطالعه، بررسی تاثیر دماهای مختلف اتوکلاو گذاری (108، 121 و 134 درجه سانتیگراد) و همچنین چرخه های اتوکلاو کردن-خنک کردن (1 تا 3 چرخه) بر میزان تشکیل نشاسته مقاوم و ویژگی های فیزیکوشیمیایی و عملکردی آن بود. نتایج نشان داد که با افزایش دمای اتوکلاو و همچنین چرخه های دمایی، میزان تشکیل نشاسته مقاوم افزایش یافت. میزان حلالیت نشاسته مقاوم حاصل نسبت به نشاسته طبیعی ذرت افزایش چشمگیری داشت در حالی که از نظر میزان آمیلوز ظاهری دچار تغییر نشد. همچنین فرایند اتوکلاو-پسروی منجر به تغییر کریستال های نشاسته از نوع A به نوع B و V شده و درصد کریستالی نشاسته نیز افزایش پیدا کرد. تصاویر میکروسکوپ الکترونی نشان دهنده تغییرات چشمگیر در گرانول های نشاسته و ایجاد بافت اسفنج مانند در اثر فرایند اتوکلاو بود. همچنین کلیه ویژگی های بافتی (سختی، پیوستگی بافت، ارتجاع پذیری و صمغی بودن) نشاسته مقاوم در مقایسه با نشاسته طبیعی ذرت دچار کاهش شد.

تثبیت همزمان آنزیم های آلفا-آمیلاز و مالتوژنیک آمیلاز با روش تجمع آنزیمی نانو مغناطیسی جهت تهیه مالتوز از نشاسته ذرت
در این تحقیق تثبیت همزمان آنزیم های آلفا-آمیلاز و مالتوژنیک آمیلاز با روش تجمع آنزیمی با اتصالات جانبی روی نانوذرات مغناطیسی عامل دار شده با لیزین جهت تهیه شربت با مالتوز بالا از نشاسته ذرت انجام شد. نانوذرات مغناطیسی 4O3Fe به روش هم رسوبی تهیه و سپس پوشش دهی سطح با اسید آمینه لیزین انجام گرفت. حلال های استو نیتریل ، استن ، ترت-بوتانول ، ایزوپروپانول ، اتانول و سولفات آمونیوم اشباع شده به عنوان عوامل تجمیع کننده آنزیم ها مورد آزمون قرار گرفتند که حلال ترت- بوتانول بالاترین فعالیت آنزیمی را جهت تثبیت نشان داد . نسبت آنزیمی 1:9( مالتوژنیک آمیلاز : آلفا-آمیلاز)، pH مطلوب برابر با 6 و دمای 65 درجه سانتی گراد ، گلوتر آلدئید با غلظت 2 میلی مولار ، و نسبت لیزین به آنزیم برابر با 75/0 :1 به عنوان شرایط ایده آل جهت تثبیت تعیین گردیدند. نتایج آنالیز DLS نشان داد که متوسط اندازه ذرات نانومغناطیس در محدوده 9/88 -9/81 نانومتر با اندیس PDI برابر با 242/0 و پتانسیل زتای 21- و متوسط اندازه ذرات آنزیم تثبیت شده در محدوده 5/110- 6/99 نانومتر با اندیس PDI برابر با 088/0 و پتانسیل زتای 32- قرار دارد. ظهور طیف های جدید مربوط به2NH و NH در طیف سنجی FTIR تاییدی بر تثبیت آنزیم روی نانوذرات مغناطیسی بود. علاوه بر این آنزیم تثبیت شده پس از 10 سیکل پی در پی میزان 36/80 % از فعالیت خود را حفظ نمود. پارامتر های سینتیکی آنزیم تثبیت شده در مقایسه با آنزیم آزاد نشان داد که Vmax تغییر معنی داری را نداشته اما، Km 5/1 برابر کاهش داشته است. نیمه عمر آنزیم تثبیت شده دردماى 95 درجه سانتی گراد نسبت به آنزیم آزاد حدود 5/2 برابر افزایش نشان داد. میزان بارگذاری آنزیم تثبیت شده روی نانوذرات مغناطیسی 82% تعیین گردید.

قابلیت بینی الکترونیک با حسگرهای اکسید فلزی تحت مدولاسیون دمایی در تشخیص منشاء جغرافیایی ادویه جات
ادویه علاوهبر تاثیر در طعم و کیفیت مواد غذایی، به دلیل خواص ضد میکروبی یا آنتی اکسیدانی عمر ماندگاری مواد غذایی را نیز فزایش میدهد.گونههای مختلف ادویهها بر اساس محل رویش، کیفیت و ارزش اقتصادی متفاوتی دارند. بنابراین طبقه-بندی و جداسازی آنها براساس منشاء جغرافیایی مورد توجه مصرفکنندگان و فروشندگان بوده و از اهمیت بالایی برخوردار است. در این پژوهش توانایی کاربرد بینی الکترونیک بر پایه حسگرهای نیمههادی اکسید فلزی به عنوان ابزاری غیرمخرب برای تشخیص منشاء جغرافیایی (هند، چین و پاکستان) سه ادویه فلفل سیاه، دارچین و زردچوبه مورد مطالعه قرار گرفت. مدولاسیون دمایی به صورت الگوی ولتاژ سینوسی انجام شد و پاسخ گذرای حسگرها برای تحلیل دادهها مورد بررسی قرار گرفت. تحلیل مولفههای اصلی(PCA) ، تحلیل تفکیک خطی(LDA)، ماشین بردار پشتیبان (SVM) و شبکههای عصبی مصنوعی (ANN) روشهایى بودند که برای رسیدن به این هدف مورد استفاده قرار گرفت. نتایج نشان داد که تصویر دادهها با استفاده از روش PCA به صورت کاملا واضح خوشههای مجزایی را بر روی فضای تغییر شکل یافته PC ایجاد کرد. با کاربرد روشهای LDA، SVM و ANN در تفکیک بر اساس منشاء جغرافیایی برای هر سه ادویه، دقت طبقهبندی %100 بدست آمد. همچنین از صحتسنجی مدلهای مذکور دقت %100 حاصل گردید. بنابراین میتوان نتیجه گرفت که بینی الکترونیک مبتنی بر حسگرهای نیمههادی اکسید فلزی تحت مدولاسیون دمایی در ترکیب با روشهای کمومتریکس (شیمی سنجی) میتواند ابزار موثر و کارآیی در طبقهبندی سریع و غیرمخرب نمونههای فلفل سیاه، دارچین و زردچوبه بر اساس منشاء جغرافیایی باشد.

خشککردن لیموترش با روش هوای گرم تحت تاثیر پیشتیمار فراصوت
هدف از این پژوهش، بدست آوردن خواص ترمودینامیکی خشککردن لیموترش تحت تاثیر پیش تیمار فراصوت در یک خشککن هوای گرم میباشد. فرآیند خشککردن در سه سطح دمایی (40، 55 و 70 درجه سلسیوس)، یک سطح سرعت هوای ورودی 1 متر بر ثانیه و چهار سطح زمان پیش تیمار فراصوت (شاهد، 10، 20 و 40 دقیقه) صورت گرفت. از 14 مدل ریاضی خشککردن جهت پیشبینی نسبت رطوبت لیموترش استفاده شد. نتایج نشان داد با افزایش دمای هوای ورودی و زمان اعمال توان فراصوت، زمان خشککردن کاهش پیدا کرد. بهترین مدل برای پیشبینی خشککردن لیموترش مدل میدیلی و همکاران انتخاب شد. استفاده از پیشتیمار فراصوت در دماهای مختلف منجر به افزایش قابل توجهی در مقدار ضریب پخش موثر رطوبت از 11-10×04/5 تا 10-10×00/2 مترمربع برثانیه شد. انرژی فعالسازی برای لیموترش در محدودهی 93/34 تا 97/42 کیلو ژول بر مول بدست آمد. همچنین مقدار انرژی مصرفی ویژه برای خشککردن لیموترش (39/47 تا 46/240 کیلو وات ساعت بر کیلوگرم) ثبت شد.

بررسی اثرات پیش تیمارهای بلانچینگ و گرمایش اهمیک در خشک کردن مایکروویو بر برخی ویژگی های کیفی برش های هویج
در این تحقیق ابتدا هویج به قطعات مساوی خرد شده و با در نظر گرفته شدن سطوح مورد نظر پیش تیمار شدند. سطوح ولتاژ مختلف در پیش تیمار اهمیک 40، 60 و 80 ولت و زمان 2، 4 و 6 دقیقه بود. پارامتر مورد بررسی در پیش تیمار بلانچینگ زمان، با سطوح مختلف 2، 4 و 6 دقیقه بود. سپس بلافاصله بعد از پیش تیمار، نمونه ها در مایکروویو با سطوح توانی 360، 600 و 900 وات خشک شدند. در نهایت نیز نمونه های خشک شده با مایکروویو و پیش تیمار و سطوح مختلف آن آسیاب شده و خواص فیزیولوژیکی مورد نظر شامل آنتی اکسیدان، فلاونوئید و فنل آن ها اندازه گیری شد. طبق نتایج بدست آمده کمترین مقدار آنتی اکسیدان در بین سطوح و پارامتر های مورد نظر، در پیش تیمار اهمیک و زمان 6 دقیقه، 21.051% بود. کمترین مقدار فلاونوئید، 52.637 میلی گرم بر 100 گرم، مربوط به زمان 6 دقیقه در پیش تیمار اهمیک بود و همچنین کمترین مقدار محتوای فنلی در پیش تیمار بلانچینگ و توان مایکروویو 360 وات به مقدار 11.816 میلی گرم بر 100 گرم اندازه گیری شد. نتایج آزمایش ها نشان داد که رابطه بین توان مایکروویو و خواص فیزیولوژیکی اندازه گیری شده مستقیم و رابطه بین ولتاژ و زمان پیش تیمار های انجام شده با خواص فیزیولوژیکی مورد نظر معکوس می باشد. همچنین در اکثر موارد می توان گفت که پیش تیمار بلانچینگ در خشک کردن دارای مقادیر بیشتری از خواص فیزیولوژیکی می باشد.

بررسی روند تغییرات ویژگی های رنگی و بافتی گوشت ماهی کپور با کمک پردازش تصویر
کیفیت ماهی تحت تاثیر روشهای حمل و نقل، شرایط نگهداری و زمان انبارمانی میباشد و این عوامل موجب تغییرات شیمیایی در ماهی شده، در نتیجه با تسریع در تخریب و فساد بافت ماهی مصرف آن را برای بدن انسان خطرناک میکند. بیشتر روشهای مورد استفاده برای بررسی تازگی ماهی هزینه بر و مخرب هستند. لذا هدف از این پژوهش توسعه روشی غیر مخرب بر مبنای رابطه بین رنگ و بافت چشم و آبشش به کمک سامانه بینایی ماشین در نظر گرفته شد. بر این اساس بعد از استخراج ناحیه مورد نظر از تصاویر (چشم و آبشش) ویژگی رنگی و بافتی از تصاویر استخراج و به کمک الگوریتم انتخاب ویژگی فیشر مناسبترین آنها انتخاب و عمل گروهبندی با کمک دو روش طبقهبندی QDA و LDA انجام پذیرفت. برای طبقهبند QDA ویژگیهای V_HSV (استخراج شده از آبشش)، انرژی و تباین (استخراج شده از چشم ماهی) و برای طبقه بند LDA ویژگی انرژی (استخراجی از چشم)، تباین (استخراجی از چشم)، V_HSV (استخراجی از آبشش)، یکنواختی (استخراجی از چشم) و H_HSV (استخراجی از آبشش)، به ترتیب به دقت 93% و 96% رسید.

مدلسازی و تعیین شرایط بهینه فرآیند حرارتی پسته رقم احمدآقایی با مایکروویو به روش سطح پاسخ
عدم یکنواختی توزیع دما در تمام حجم محصول یکی از مشکلات اصلی فرآیندهای حرارتی میباشد. این پژوهش با روش سطح پاسخ به منظور مدلسازی فرآیند حرارتی پسته رقم احمدآقایی با مایکروویو و تعیین شرایط بهینه یکنواختی بیشتر توزیع دما در محصول انجام شد. متغیرهای مستقل کمی شامل زمان حرارتدهی (50-20 s) و توان مایکروویو (w 630-900) و متغیر مستقل کیفی شامل موقعیت قرارگیری میله دماسنج در شش نقطه داخل ظرف حاوی پسته و متغیر وابسته (پاسخ) دمای محصول تحت حرارتدهی مایکروویو بود. این آزمایشات بصورت جداگانه برای دو نوع شکل ظرف حاوی محصول شامل مکعبی و استوانهای انجام شد. نتایج حاصل از تجزیه واریانس نشان داد تمامی اثرات اصلی شامل زمان حرارتدهی، توان مایکروویو و موقعیت دماسنج؛ در هر دو نوع ظرف مکعبی و استوانهای و همچنین اثرات متقابل در سطح 1%، معنیدار میباشند. بر اساس نتایج بدست آمده یکنواختی توزیع دما در توده محصول به شکل مکعبی بیشتر از شکل استوانهای بود. از سوی دیگر توزیع دما در توان حداقل (w 630) یکنواختی بیشتری نسبت به توان حداکثر (w 900) از خود نشان داد. شرایط بهینه جهت ایجاد یکنواختی بیشتر دما با اعمال فرآیند حرارتدهی در مدت زمان 44 تا 45 ثانیه و با توان 720 تا 750 وات برای ظروف استوانهای و مدت زمان 45 تا 47 ثانیه و با توان 630 تا 670 وات برای ظروف مکعبی تعیین گردید. بررسی صحت مدل بدست آمده جهت پیش بینی پاسخ، از طریق محاسبه ریشه مربعات میانگین خطا انجام شد. مقدار پائین آن در تمام شش موقعیت از محصول، نشان دهده نزدیکی مقادیر آزمایشگاهی و پیش بینی شده است و صحت مدل را تأیید مینماید.

تاثیر روشهای استخراج خیساندن و فراصوت بر محتوای ترکیبات فنلی بره موم
در این پژوهش مقدار ترکیبات فنلی کل موجود در عصاره برهموم حاصل از استخراج به دو روش خیساندن و فراصوت و نیز تأثیر روش استخراج بر نوع و مقدار هر یک از ترکیبات فنلی به روش کروماتوگرافی مایع با کارایی بالا (HPLC) بررسی شده است. استخراج به روش خیساندن در نسبتهای مختلف بره موم به حلال اتانل 70% (10, 30, 50 % w/v) و در مدتهای مختلف (2, 8, 24 h) انجام گرفت. استخراج به کمک فراصوت نیز در مدتهای صوتدهی (7, 14, 21 min) و دامنههای نوسانی (60, 80, 100 %) انجام شد. بیشترین مقدار ترکیبات فنلی در عصاره برهموم از روش خیساندن در مدت استخراج 24 h و با نسبت 10 %w/v بره موم به حلال برابر با 44.82% بدست آمد. در حالیکه، با روش اعمال فراصوت به مدت 21 min و با دامنه نوسانی 80% بیشترین ترکیبات فنلی برابر با 41.19% حاصل شد. شناسایی محتوی ترکیبات فنلی عصاره ها با استفاده از کروماتوگرافی مایع با کارایی بالا نشان داد که تعداد 15 ترکیب فنلی در عصاره بره موم حاصل از روش خیساندن مشخص شدند در حالی که در عصاره به دستآمده از روش فراصوت 13 ترکیب شناسایی شدند. بیشترین ترکیب بازیابی و شناسایی شده در عصاره برهموم از هر دو روش استخراج پینوسمبرین بود که مقدار آن در عصارهها 15.1% در روش فراصوت و11.7% در روش خیساندن تعیین شد. نتایج کروماتوگرافی نشان داد که درصد هر یک از ترکیبات شناسایی شده در عصاره استخراج شده به روش فراصوت بیشتر از ترکیبات مشابه در روش خیساندن بود.
