In the country Pistachio trees such as P. khinjuk, have formed the more than 1200000 hectares of land in the country.  In this study, the chemical structure of the P. khinjuk kernel oil such as the fatty acid structure, tocopherol composition and the refractive index were determined. Also its oxidative stability during heat treatment at 170 ° C for 8 hours was compared by Conjugated Diene Value (CDV) Oil/Oxidative Stability Index (OSI) with olive oil. Investigation showed that  kernel of Khinjuk has 30٪ oil. Kernel oil contains more than 80 percentages unsaturated fatty acids (USFA) and dominant fatty acid is oleic acid (57.39%).Also total tocopherols, Refractive Index were 619.4 mg/kg, 1.47 degree respectively. The results also showed that there was statistically Significant differences between means of CDV and OSI  between the olive and  khinjuk kernel oils. According to the results mentioned above, P. khinjuk kernel oil as a new source of vegetable oil is unsaturated such as cottonseed and sunflower oils. Well as P. khinjuk kernel oil has a more oxidative stability compared to olive oil, that can be attributed to its antioxidant composition in particular tocopherols.}, keywords = {P. khinjuk kernel,tocopherol compounds,olive,termal Stability,Conjugated Diene}, title_fa = {مقایسه ساختار شیمیایی و پایداری حرارتی روغن مغز کلخونگ (pistacia khinjuk) به عنوان یک منبع جدید روغن نباتی با روغن زیتون}, abstract_fa = {شناسایی و کشت دانه های روغنی جدید، گامی مهم در جهت تامین روغن مورد نیاز در کشور است. درختان پسته وحشی از جمله کلخونگ (pistacia khinjuk)، در ایران بیش از یک میلیون و دویست هزار هکتار از اراضی کشور را به خود اختصاص داده اند. در این تحقیق ساختار شیمیایی روغن مغز کلخونگ از نظر ساختار اسیدهای چرب، ترکیبات توکوفرولی و ضریب شکست تعیین و پایداری اکسایشی آن طی 8 ساعت فرایند حرارتی در دمای 170 درجه سانتیگراد با روغن زیتون مقایسه گردید. بررسی ترکیب شیمیایی مغز کلخونگ نشان داد میزان چربی آن 30 درصد و بیش از 80 درصد از ترکیب اسیدهای چرب آن از نوع غیر اشباع بود. اسید چرب غالب در مغز کلخونگ، اسید اولئیک (39/57 %) بود و میزان ترکیبات توکوفرولی، ضریب شکست برای روغن مغز کلخونگ به ترتیب 4/619 میلی گرم بر کیلوگرم، 47/1 درجه اندازه گیری شد. بررسی پایداری اکسایشی نیز نشان داد بین عدد دی ان مزدوج و پایداری حرارتی روغن مغز کلخونگ و زیتون به لحاظ آماری تفاوت معنی داری وجود دارد. با توجه به نتایج ذکر شده، روغن مغز کلخونگ به عنوان یک منبع جدید روغن نباتی در گروه روغن های غیر اشباع نظیر پنبه دانه و آفتابگردان قرار می گیرد. همچنین روغن مغز کلخونگ از پایداری اکسایشی بالاتری در مقایسه با روغن زیتون برخوردار می باشد که می توانآن را به ترکیب مناسب ضد اکسندگی آن، بویژه توکوفرول ها، نسبت داد.}, keywords_fa = {مغز کلخونگ,ترکیبات توکوفرولی,زیتون,پایداری حرارتی,دی ان مزدوج}, url = {https://jift.irost.ir/article_71.html}, eprint = {https://jift.irost.ir/article_71_cabdbe75b69e99072b57f581e93bad85.pdf} }
