پیشبینی برخی خواص کیفی ارقام مختلف برنج سفید با استفاده از فناوری پردازش تصویر
برنج یکی از رایجترین و پرمصرفترین مواد غذایی در جهان است. خواص کیفی ازجمله عوامل بسیار مهم در تعیین ویژگیهای پخت و فرآوری برنج محسوب میشوند. یکی از مشکلات مهم در صنایع غذایی پیشبینی خواص کیفی میباشد. بنابراین در این مطالعه، امکان پیشبینی میزان آمیلوز (AC)، درجه حرارت ژلاتینه شدن (GT)، قوام ژل (GC)، میزان پروتئین (PC)، حداقل چسبندگی (MV)، حداکثر چسبندگی (PV)، چسبندگی نهایی (FV)، فروریختگی چسبندگی (BDV) و پسروی چسبندگی (SBV) از 100 نمونه تکدانه برنج ارقام هاشمی، خزر و درفک با استفاده از فناوری پردازش تصویر در سه شرایط نورپردازی شامل نوردهی مستقیم با لامپ LED، نوردهی مستقیم با لامپهای LED و فلورسنت و نوردهی بهصورت ضد نور انجام گردید. مدلهای کالیبراسیون توسط رگرسیون خطی چند متغیره با حداقل مربعات جزئی (PLS) توسعه داده شد. مقادیر ضرایب تعیین کالیبراسیون متغیرهای AC، GT، GC، PC، MV، PV، FV، BDV و SBV در رقم هاشمی، خزر و درفک برای تمام تیمارها به ترتیب معادل 89/0 R2cal ≥، 95/0 R2cal ≥، 92/0 R2cal ≥ و ضرایب پیشبینی به ترتیب با 88/0 R2pre ≥، 94/0 R2pre ≥، 90/0 R2pre ≥ به دست آمد. نتایج رگرسیون PLS نشان داد که متغیرهای مستخرج از ویژگیهای شکل و اندازه و متغیرهای رنگی R، G، B، L، a و b حاصل از پردازش تصویر میتوانند پارامترهای کیفی برنج را با دقت قابلملاحظهای پیشبینی نمایند. درنتیجه میتوان با استفاده از فناوری پردازش تصویر با هزینه کمتر و غیر مخرب برخی خواص کیفی برنج را با دقت خوبی پیشبینی کرد.

طراحی و ساخت سامانه تشخیص خودکار عیوب پرتقال با استفاده از الگوریتم تصحیح نور تطبیقی
تشخیص اتوماتیک میوه معیوب از طریق سیستم بینایی کامپیوتری با توجه به توزیع ناپایداری ناهموار بر روی سطح مرکبات همچنان با مشکل مواجه است. در نتیجه توسعه سامانهای که توانایی تشخیص خرابی در مرکبات را با دقت و سرعت بالایی داشته باشد امری ضروری است. بنابراین در این مقاله یک الگوریتم تصحیح نور تطبیقی پیادهسازی گردید که به صورت ساده بر تداخل توزیع شدت بازتابی غیرمستقیم در سطح میوه در حالت بر خط و استاتیک غلبه نموده و از تشخیص خطا اجتناب مینماید. در پژوهش تعداد 200 عدد نمونه شامل 50 عدد پرتقالهای سالم و 150 عدد پرتقال معیوب (کپک سبز، شپشک سپردار واوی مرکبات، آلترناریا و آسیب های مکانیکی) مورد بررسی قرار گرفت. در این سامانه از هر نمونه 4 تصویر اخذ گردید و پس از پیادهسازی الگوریتم پیشنهادی بر روی هر 4 تصویر پرتقالها به دو گروه سالم و معیوب طبقهبندی شدند. بر اساس نتایج مشخص گردید که دقت سامانه برای خرابیهای کپک سبز، شپشک سپردار مرکبات، آلترناریا و آسیبهای مکانیکی به ترتیب 80/87، 42/71، 28/74 و 100 بدست آمد که نشان از عملکرد بالای روش پیشنهادی دارد.

بررسی تاثیر فرآیند حرارتی اهمیک بر خواص حرارتی غلاف لوبیا سبز
در این پژوهش از یک جعبه شیشه ای و با استفاده از رگولاتور ولتاژ در سه ولتاژ 30، 50، 70 ولت و در سه زمان 3 ، 6 ، 9 دقیقه جوشاندن درجعبه شیشه ای تغییرات وزن اندازه گیری و با استفاده از ثبت کننده داده، تغییرات دما ثبت شد. سپس خواص حرارتی غلاف شامل: ظرفیت گرمای ویژه ، ضریب هدایت حرارتی و ضریب پخش حرارتی جداگانه مورد بررسی قرار گرفت. داده ها با استفاده از آزمایش فاکتوریل درقالب طرح کاملا تصادفی مورد تجزیه و تحلیل قرار گرفت. نتایج نشان داد که هر دو عامل مورد مطالعه یعنی مدت زمان گرمایش اهمیک و مقدار ولتاژ تاثیر معنی داری بر روی گرمای ویژه ، ضریب هدایت حرارتی و ضریب انتشار حرارتی داشتند، بدین صورت که گرمای ویژه و ضریب هدایت حرارتی روند افزایشی و ضریب انتشار حرارتی روند کاهشی داشتند به طوری که بیشترین مقدار گرمای ویژه در ولتاژ 70 ولت و زمان 9 دقیقه است که مقدار آن kJkg-1°C-1 923/0 و کمترین مقدار گرمای ویژه در ولتاژ 30 ولت و زمان 3 دقیقه که مقدار آن kJkg-1°C-1 190/0 بدست آمد، در بحث ضریب هدایت حرارتی بالا ترین ضریب هدایت حرارتی در ولتاژ 70 ولت و زمان 9 دقیقه که مقدار آن Wm-1°C-1 513/0 و کمترین ضریب هدایت حرارتی در ولتاژ 50 ولت و زمان 3 دقیقه که مقدار آن برابر با Wm-1°C-1 150/0 است و همچنین در بحث ضریب انتشار حرارتی بیشترین مقدار مربوط به ولتاژ 50 و زمان 3 دقیقه که برابر با m2s-1 6-10×2/7 و کمترین ضریب انتشار حرارتی برابر با m2s-1 6-10 ×2/1 که مربوط به ولتاژ 30 ولت و زمان 9 دقیقه بود.

بهینه یابی شرایط هموژنیزاسیون فراصوت خامه شیر شتر با استفاده از الگوریتم ازدحام ذرات چند هدفه
در این تحقیق، اثر توان (120 تا 360 وات)، زمان (1 تا 6 دقیقه) و دما (25 تا 65 درجه سانتی گراد) بر متوسط اندازه ذرات گویچه چربی، خصوصیات رئولوژیکی (سختی، قوام و چسبندگی) و رنگ (شاخص سفیدی) خامه شیر شتر مورد ارزیابی قرار گرفت و سپس این خصوصیات با استفاده از مدلهای به دست آمده از طرح باکس-بنکن توسط الگوریتم های ازدحام ذرات چند هدفه و الگوریتم تپهنوردی (قابلیت بهینه یابی عددی در نرم افزار Design Expert) بهینه گردید. نتایج نشان داد که با افزایش توان، زمان و دمای فراصوت، متوسط اندازه ذرات گویچه چربی نمونه ها کاهش یافت. نتایج حاصل از آزمون اکستروژن پسرو نیز نشان داد که فقط اثر متقابل توان- زمان در سطح 95 درصد بر سختی و چسبندگی نمونه ها معنیدار بودند به طوری که با افزایش زمان در توان های پایین سختی و چسبندگی نمونه ها افزایش می یافت ولی در توان های بالا با افزایش زمان، سختی و چسبندگی نمونه ها کاهش یافت. همچنین با افزایش زمان، قوام نمونه ها نیز به طور معنی داری افزایش یافت. همچنین نتایج تحقیق نشان داد که با افزایش توان و زمان شاخص سفیدی نمونه ها افزایش یافت. نتایج مقایسه میانگین 5 نقطه بهینه به دست آمده نیز نشان داد که الگوریتم فرا ابتکاری ازدحام ذرات میانگین توان و دمای معنی دار بالاتر و زمان معنی دار پایین تری را به دست آورد که این نقاط به دست آمده منجر به کاهش معنی دار متوسط اندازه ذرات گویچه چربی و افزایش سختی شد. بنابراین به طور کلی می توان نتیجه گرفت که الگوریتم ازدحام ذرات از عملکرد بهتری نسبت به الگوریتم تپه نوردی در بهینه یابی مدلهای به دست آمده از طرح باکس بنکن در بهینه یابی شرایط هموژنیزاسیون فراصوت خامه شیر شتر داشت.

بررسی تاثیر بسته حاوی نانوذرات دیاکسید تیتانیوم و اکسید روی بر ماندگاری و تغییرات کیفی سیب و انگور
هدف از این پژوهش، بررسی تاثیر بستهبندی حاوی نانوذرات ضدمیکروبی اکسید روی و دیاکسید تیتانیوم با هدف افزایش ماندگاری میوههای سیب و انگور بود. برای این منظور، فیلمهای پلیاتیلن با دانسیتة کم حاوی غلظتهای مختلف نانوذرات دیاکسید تیتانیوم (0، 5/0 و 5/1 درصد) و اکسید روی (0، 75/0 و 5/1 درصد) با استفاده از روش اکستروژن دمشی تهیه گردید؛ پس از بستهبندی سیب و انگور با این فیلمها، خواص کیفی، فیزیکیو شیمیایی و میکروبی آنها طی نگهداری به ترتیب به مدت 90 و 30 روز در شرایط سردخانه صنعتی (دمای10-8 درجه سانتیگراد و رطوبت نسبی 85 درصد) مورد ارزیابی قرار گرفت. نتایج نشان داد که با استفاده از فیلمهای حاوی نانو ذرات درصد تغییر مواد جامد محلول، افت وزن، اسیدیته، شاخص قهوهای شدن و شاخص سفتی بافت سیب و انگور کمتر از نمونههای شاهد بود. استفاده از این بستهبندیهای همچنین مانع افزایش بار میکروبی سیب و انگور شامل باکتریهای سرمادوست و کپک و مخمر در طول دوره نگهداری شد و فیلم حاوی 5/1 درصد دیاکسید تیتانیوم بیشترین تأثیر را روی حفظ ویژگیهای کیفی سیب و انگور داشت. بطور کلی، دیاکسید تیتانیوم هم در حفظ خواص فیزیکیوشیمیایی میوهها و هم در تقویت خواص ضدمیکروبی فیلم و افزایش ماندگاری سیب و انگور موثرتر از اکسید روی عمل نمود. نتایج این پژوهش تأیید نمود که استفاده از این نوع بستهبندی میتواند بعنوان یک روش کمکی به منظور افزایش ماندگاری در حین تولید و عرضه سیب و انگور مورد استفاده قرار گیرد و تأثیر قابل توجهی برخواص کیفی محصول داشته باشد.

بهینه سازی اثر همزمان تغییر عوامل موثر بر رنگبری بر کیفیت روغن آفتابگردان به روش سطح پاسخ
رنگبری در تصفیه روغن های خوراکی یک مرحله اساسی می باشد. جاذب های مورد استفاده برای رنگبری، رنگدانهها و دیگر ناخالصیها مانند صابون، فلزات، فسفولیپیدها و محصولات اکسیداسیون را حذف می کند. حذف این ناخالصی ها خواص حسی و مقاومت اکسیداتیو روغن بی بو شده را بهبود می بخشد. باتوجه به اهمیت فرآیند رنگبری در عملیات تصفیه روغنهای خوراکی، در این تحقیق روغن آفتابگردان انتخاب شد و اثر فرایند رنگبری بر ویژگیهای شیمیایی روغن به منظور بهینهسازی فرایند موردمطالعه قرار گرفت. برای این منظور اثر زمان (15، 25، 35، 45 و 55 دقیقه)، دما (80، 90، 100، 110 و120 درجه سانتیگراد)، و غلظت خاک رنگبر (4/0، 6/0، 8/0، 1 و 2/1درصد) با استفاده از طرح آماری حداقل سطح پاسخ در 5 سطح به روش Central composite design ( (CCDبا هدف کاهش مصرف خاک رنگبر بررسی شد. پاسخهای موردمطالعه شامل اندازه گیری کاروتنوئیدها، استرول، توکوفرول و مقدار فلزات مس و آهن بودند. پس از انجام بهینهسازی با هدف باقیماندن حداقل عوامل نامطلوب پس از رنگبری و حداقل مصرف خاکرنگبر بهترین شرایط در روغن آفتابگردان زمان min18/39، دمای ˚C85/103 و غلظت خاک رنگبر 94% پیش بینی شد که قادر بود 57% انتظارات ما را برآورده کند. نتایج عملی هیچ اختلاف معناداری با مقادیری که از طریق تئوری بدست آمده بود نشان نداد و مؤید این نتایج بود.

توسعه و ارزیابی الگوریتم پردازش تصویر برای دانه بندی کریستال های شکر سفید
آزمون الک روش استانداردی است که در کارخانه های تولید شکر برای تعیین اندازه ذرات شکر به طور گسترده استفاده می شود. نیاز به نمونه های نسبتاً بزرگ، زمانبر بودن، محدود بودن اطلاعات بدست آمده، خودکار و آنلاین نبودن از معایب آزمون الک می باشند. تکنیک پردازش تصویر می تواند بصورت سریع، خودکار و لحظه ای پارامترهای مربوط به اندازه و شکل ذرات شکر را تعیین نماید و جایگزین مناسبی برای آزمون الک می باشد. در این پژوهش با هدف ارائه الگوریتم مناسب پردازش تصویر برای تعیین اندازه کریستال های شکر سفید، ابتدا کریستال های توده شکر با استفاده از آزمون استاندارد الک (در 7 اندازه الک و 10 تکرار) بر اساس اندازه دسته بندی شدند. سپس تصاویر کریستال ها با استفاده از یک میکروسکوپ دیجیتال با دوربین 5 مگاپیکسلی تهیه شد. سه نشانگر پیش زمینه-پس زمینه (FB)، فرسایش نهایی (UE) و تبدیل فاصله (DT) برای بخش بندی تصاویر و استخراج پارامترهای هندسی ذرات در محیط جعبه ابزار پردازش تصویر نرم افزار متلب استفاده شدند. تجزیه واریانس مقادیر شاخص میانگین روزنه (MA) بر اساس آزمایش فاکتوریل در قالب طرح کاملاً تصادفی و مقایسه میانگین ها با آزمون چند دامنه دانکن انجام شد. تاثیر هر دو عامل اندازه الک و روش بخش بندی و همچنین اثر متقابل آنها بر مقدار MA معنادار بود. مقادیر MA نشانگرهای FB و UE با مقدار MA مرجع بدست آمده با روش دستی تفاوت معناداری در سطح یک درصد نداشت. از آنجائیکه نشانگر UE بدلیل خطای کمتر در تعیین MA (برابر با 13/10 درصد) بهترین عملکرد را داشت، لذا برای تعیین آنلاین اندازه کریستال های شکر سفید با تکنیک پردازش تصویر توصیه می شود.

ارزیابی حسی آبمیوه توتفرنگی توسط منطق فازی و بررسی فعالیت آنتیاکسیدانی آن طی نگهداری انجمادی
توتفرنگی یکی از میوههای پرطرفدار برای مصرفکنندگان است. اما یکی از مشکلات اساسی آن ماندگاری پایین است و انجماد به عنوان روشی که اثرگذاری اندکی بر ویژگیهای آنتیاکسیدانی توتفرنگی دارد، برای نگهداری طولانی مدت این میوه استفاده شده است. اما تاثیر انجماد بر ویژگیهای حسی و تغییرات آن، موضوعی است که نیاز به بررسیهای بیشتری دارد. از طرف دیگر امروزه تجزیه و تحلیل مولفههای غیردقیق موجود در نتایج ارزیابیهای حسی با روشهای ریاضی مانند منطق فازی مورد توجه قرار گرفته است. لذا در این پژوهش ابتدا میوهی توتفرنگی در مدت شش ماه و در دمای 2±18- در فریزر نگهداری شد و تاثیر انجماد بر روی این میوه پس از آبگیری بررسی شد. در زمانهای 0، 3، 30، 60 و 180 روز، میوههای توتفرنگی از فریزر خارج شده و پس از آبگیری با بهرهگیری از روش هدونیک پنج نقطهای، آبمیوه توتفرنگی ارزیابی حسی شد و دادههای بدست آمده با منطق فازی آنالیز شد. رنگ، عطر و بو، طعم و احساس دهانی از جمله شاخصهای ارزیابی حسی بودند. در این مطالعه همچنین خواص فیزیکوشیمیایی از جمله pH، میزان اسیدیته و میزان فنل کل نمونهها سنجش شدند. ارزیابی حسی نمونههای توتفرنگی نشان داد که نگهداری این میوه به صورت انجمادی حتی با وجود تغییرات pH و اسیدیته تاثیر قابل توجهی بر روی مطلوبیت نمونهها ندارد. در اثر انجماد، نمونهها دچار کاهش pH (92/1%) و افزایش اسیدیته (18/0%) و نیز کاهش فعالیت آنتیاکسیدانی (26/25%) و ترکیبات فنلی (022/0%) شد. نتایج بررسیهای فیزیکوشیمیایی و آنتیاکسیدانی، اندازهگیری فنل کل آبمیوه توتفرنگی و ارزیابی حسی به روش منطق فازی مجموعا این دیدگاه را ایجاد میکند که نگهداری انجمادی روشی مناسب برای نگهداری میوه توتفرنگی به مدت طولانی میباشد.

تأثیر شرایط مختلف خشک کردن برضریب پخش رطوبت مؤثر، انرژی مصرفی و راندمان استخراج اسانس بادرنجبویه
هدف از این تحقیق بررسی تأثیر دما و دبی جابجایی هوا بر ضریب پخش رطوبت مؤثر، انرژی مصرفی ویژه، نرخ خشککردن، نسبت رطوبت و بازده استخراج اسانس در خشک کن هیبریدی به صورت لایه نازک برای گیاه دارویی بادرنجبویه Melissa officinalis بود. آزمایش در چهار دمای40، 50، 60 و 70 درجه سانتیگراد و سه دبی هوای 1، 5/1 و 2 متر بر ثانیه انجام شد. حداکثر مقدار ضریب پخش رطوبت مؤثر در دبی هوای 5/1 متر بر ثانیه و دما هوای ورودی 70 درجه سانتیگراد برابر با 11-10×05/1 (متر مربع بر ثانیه) بدست آمد. همچنین، حداقل مقدار ضریب پخش رطوبت مؤثر در دبی هوای 1 متر بر ثانیه و دما هوای ورودی 40 درجه سانتیگراد برابر با 12-10×1/7 (متر مربع بر ثانیه) بدست آمد. کمترین میزان انرژی مصرفی ویژه مورد نیاز (65/75 مگاژول بر کیلوگرم) در دمای 40 درجه سانتیگراد و دبی هوای ورودی 1 متر بر ثانیه، در حالی که شرایط متناظر برای بیشترین مقدار آن (76/326 مگاژول بر کیلوگرم) در دمای 70 درجه سانتیگراد و دبی هوای ورودی 2 متر بر ثانیه به دست آمد. بیشترین میزان اسانس استحصالی مربوط به دمای 40 درجه سانتیگراد و دبی جابجایی هوای 1 تا 5/1 متر بر ثانیه با مقدار تقریبی 5/0 میلیلیتر بر اساس حجمی (v/w) بدست آمد و با افزایش دما از 40 درجه سانتیگراد به 70 درجه سانتیگراد میزان اسانس استحصالی بهطور معنیداری کاهش یافت.

امکان سنجی سس تولید مایونز بدون نگهدارنده به کمک فراصوت: بررسی خصوصیات فیزیکوشیمیایی و حسی محصول در زمان نگهداری
مطالعه قرار گرفت، با این هدف که آیا و تا چه اندازهای این اثر میتواند تغییراتی در اسیدهای چرب و اکسایش چربی آن ایجاد کند. پارامترهای اصلی اکسایش (پراکسید، اسیدیته روغن، تیوباربیتوریک اسید، عدد توتوکس و پروفایل اسیدهای چرب) و همچنین ویژگیهای حسی بر اساس آزمون هدونیک 5 نقطهای و آزمون پایداری امولسیون در دمای C° 4 و در حالت تسریع شده در دمای ℃ 50 در تیمارهای سس مایونز (فراصوت شده و بدون نگهدارنده)، (فراصوت نشده و بدون نگهدارنده) و (فراصوت نشده و با نگهدارنده) 1، 90 و 180 روز بعد از تولید مورد ارزیابی قرار گرفت. نتایج نشان داد که تمام تیمارها دارای ثبات ظاهری مناسبی بودند و آثاری از جدا شدن روغن مشاهده نشد. نتایج آزمون کروماتوگرافی گازی بیانگر این بود که تیمار فراصوت مقادیر اسیدهای چرب پالمیتیک 33/7%، آلفا لینولنیک 36/2% و استئاریک 91/3% و همچنین مقدار کل اسیدهای چرب چند غیراشباع روغن سویا 148/58% که به ترتیب در نمونه های شاهد (44/9%، 81/4%، 27/4%، 09/59%) بودند را به طور معناداری کاهش داده است و برعکس در نمونه های تیمار شده با فراصوت اسیدهای چرب اولئیک 26/25% و لینولئیک 91/55% در مقایسه با تیمارهای شاهد که به ترتیب 047/22% و 93/53% بودند افزایش یافت. همچنین تیمار فراصوت عدد پراکسید و عدد اسیدیته را افزایش داد بطوریکه در روز اول بیشترین مقدار پراکسید meq O2/kg oil 54/3 که در نمونه شاهد meq O2/kg oil 26/2 بود و بیشترین مقدار اسیدیته روغن مایونز تیمار شده با فراصوت 189/0 که در نمونه شاهد 113/0 بود و این مقادیر طی زمان نگهداری افزایش پیدا کردند. در روز اول کمترین مقدار تیوباربیتوریک اسید 03/26 و عدد توتوکس 11/33 که به عنوان نشان دهنده روند اکسایش کلی محصول، در تیمار فراصوت بود در مقایسه با تیمارهای شاهد که به ترتیب 13/45 و 83/118بودند کاهش چشمگیری داشت
