In this study, the effect of various chitosans (water-soluble, acid-soluble, oligosaccharide) was investigated with ratio of 50:50 chitosan-gelatin. The latter was extracted from farmed Huso huso skin. In order to evaluate the effect of chitosan kinds in combination with gelatin extracted from the fish, physical, mechanical experiments, and then optical and infrared spectroscopic tests, and thermal characteristics of the films were assessed. In this study, the highest tensile strength and elongation at break point was obtained in films containing 100% gelatin and 50-50% soluble chitosan and gelatin one, respectively. In the chitosan oligosaccharide film, the highest moisture and solubility was observed while in the pure gelatinous film the lowest amounts of them were portrayed. Regarding swelling rate results, all films (soluble in gelatin / chitosan) were dissolved, while the lowest percentage of swelling rate was found in the pure gelatinous film. The results of the water vapor permeability of the films showed that the gelatinous films combined with the acid-soluble and oligosaccharide chitosan showed the lowest and the highest permeability to water vapor, respectively. The optical properties and transparency of the films showed a significant difference. The results of the infrared spectroscopy indicated that the gelatin- chitosan oligosaccharide film due to the less breaking process and the stronger absorption of band in amide 1, demonstrated better properties. In addition, the thermal stability and the weighted remainder of the combined films were more than that of the pure gelatinous film, which can be attributed to the incorporation of chitosans in the film matrix.}, keywords = {Combined oral film,Gelatin,Chitosan,structure,thermal stability}, title_fa = {اثر نوع کیتوزان بر ویژگی های فیلم های زیست تخریب پذیر تولید شده از ژلاتین حاصل از پوست فیل ماهی (Huso huso)}, abstract_fa = {قابلیت تشکیل فیلم از ژلاتین و هم‌چنین کیتوزان موجب شده که به‌عنوان فیلم‌های خوراکی با خواص فیزیکی و مکانیکی مناسب در صنعت بسته‌بندی و نگه‌داری مورد استفاده قرار گیرند. در این مطالعه اثر ترکیب کیتوزان‌های مختلف محلول در آب، محلول در اسید، الیگوساکارید با نسبت وزنی 50:50 با ژلاتین استخراج شده از پوست فیل ماهی پرورشی برای تولید فیلم مورد بررسی قرار گرفتند. به منظور ارزیابی اثر نوع کیتوزان در ترکیب با ژلاتین استخراج شده از ضایعات پوست فیل ماهی پرورشی و خواص فیلم‌ها، آزمون­های فیزیکی، مکانیکی، نوری و طیف­سنجی مادون قرمز وآزمون سنجش تغییراتگرمایی-وزنی فیلم­های مربوطه انجام گرفت. در این تحقیق بالاترین میزان استحکام کششی و ازدیاد طول در نقطه شکست به‌ترتیب در فیلم­های ژلاتین 100% و فیلم ژلاتین کیتوزان محلول در آب 50% بود. در فیلم­های ترکیبی با کیتوزان الیگوساکارید بالاترین و در فیلم­های ژلاتینی 100% کم‌ترین میزان رطوبت و حلالیت مشاهده شد. در نتایج مربوط به درصد تورم پذیری مشاهده شد که فیلم‌های (ژلاتین/کیتوزان محلول در اسید) حل شدند و در حالی که کم‌ترین درصد تورم پذیری را فیلم ژلاتینی 100% داشت. نتایج حاصل از بررسی نفوذپذیری به بخار آب فیلم­های تولیدی بیانگر این بود که فیلم­های ژلاتینی ترکیب شده با کیتوزان الیگوساکارید و محلول در اسید به‌ترتیب کم‌ترین و بیش‌ترین میزان نفوذ­پذیری نسبت به بخار آب را از خود نشان دادند. خواص­ نوری و شفافیت فیلم­ها به‌طور کلی اختلاف معنی­داری با یکدیگر نشان­دادند. نتایج حاصل از طیف سنجی مادون قرمز بیانگر این بود که فیلم ژلاتین/کیتوزان الیگوساکارید به‌دلیل فرایند تخریبی کم‌تر و باند جذبی قوی‌تر در ناحیه آمید1، خواص بهتری نسبت به سایر فیلم­ها دارد. هم‌چنین پایداری حرارتی و باقی­مانده وزنی فیلم­های ترکیبی از فیلم ژلاتین خالص بیش‌تر بود که این پدیده را می‌توان به اثر افزودن کیتوزان‌ها و حضور آن‌ها در ماتریکس فیلم‌ها مرتبط دانست.}, keywords_fa = {فیلم خوراکی ترکیبی,ژلاتین,کیتوزان,ساختار,پایداری حرارتی}, url = {https://jift.irost.ir/article_682.html}, eprint = {https://jift.irost.ir/article_682_7f6e90e8ae0b1841c928eea9583fd3b9.pdf} }
