The effect of 1% solution of trehalose, including Artemisia sieberi essential oil as an edible coating on the some qualitative features of cherry tomato including water loss (%), firmness (N), titrable acidity (%citric acid), ascorbic acid (%), antioxidant activity (DPPH assay), color (L*a*b*) and organoleptic characteristics was evaluated during ten days of storage compared to non-coated sample in the refrigerator (4֩C and 75-85% RH). The essential oil was extracted from the aerial parts of A. sieberi with hydrodisstilation and using Clevenger apparatus and added to trehalose (0.5, 1, and 1.5% v/w). The weight, firmness, titrable acidity, ascorbic acid and antioxidant activity of all samples decreased during storage, but at the end of storage fruit coated with trehalose and essential oil showed a lower weight loss and higher firmness and antioxidant activity compared to uncoated cherry tomato. Coating of fruits delayed the decrease of titrable acidity and ascorbic acid during storage. The results indicated that the coating retained the lightness (L*) and increased the redness (a*) of the tomatoes. This coating also improved some of the sensory and appearance properties (color, odor, texture, taste) of the tomato without any adverse effect on its overall acceptance. It is concluded that trehalose comprising A. sieberi essential oil as a novel coating clearly delayed ripening and senescence effects on cherry tomatoes and promoted the storage postharvest quality of fruits.}, keywords = {Cherry tomato,Shelf life,coating,essential oil}, title_fa = {تاثیر پوشش تری‌هالوز حاوی اسانس درمنه (Artemisia sieberi) بر ویژگی-های پس از برداشت گوجه فرنگی گیلاسی}, abstract_fa = {پوشش میوه‌های گوجه‌فرنگی با هیدروکلوئیدهای خوراکی موجب بهبود برخی ویژگی‌های کیفی پس از برداشت آن‌ می‌شود. تاثیر محلول 1 درصد تری‌هالوز حاوی اسانس درمنه (5/0، 1 و 5/1 درصد) به‌عنوان یک پوشش خوراکی بر برخی ویژگی-های کیفی گوجه‌گیلاسی شامل افت‌وزنی (%)، سفتی (نیوتن)، اسیدیته قابل‌تیتر (% سیتریک اسید)، آسکوربیک اسید (%)، فعالیت آنتی‌اکسیدانی (آزمون DPPH)، رنگ (L*a*b*) و خصوصیات حسی طی مدت ده روز نگهداری در مقایسه با نمونه بدون پوشش در یخچال (دمای 4 درجه سانتی‌گراد و رطوبت نسبی 85-75%) مورد بررسی قرار گرفت. اسانس درمنه از اندام هوایی گیاه خشک شده با روش تقطیر با آّب و استفاده از دستگاه کلونجر استخراج و در مقادیر 5/0، 1 و 5/1 درصد (حجمی-وزنی) به تری‌هالوز اضافه گردید. میزان وزن، سفتی، اسیدیته، آسکوربیک اسید و فعالیت آنتی‌اکسیدانی همه نمونه-ها طی نگهداری کاهش یافت ولی در پایان زمان نگهداری، نمونه‌های پوشش داده شده افت وزنی کمتر و سفتی و میزان فعالیت آنتی‌اکسیدانی بیشتری در مقایسه با گوجه‌گیلاسی‌های بدون پوشش از خود نشان دادند. پوشش میوه‌ها کاهش اسیدیته و آسکوربیک اسید را طی انبارداری به تاخیر انداخت. نتایج نشان داد که پوشش موجب حفظ شفافیت (L*) و افزایش قرمزی (a*) گوجه‌ها گردید. همچنین پوشش تری‌هالوز و اسانس موجب بهبود برخی ویژگی‌های حسی و ظاهری (رنگ، بو، بافت، طعم) گوجه شد بدون آنکه تاثیر نامطلوبی بر پذیرش کلی آن داشته باشد. براساس یافته‌های این تحقیق، به نظر می‌رسد که تری‌هالوز حاوی اسانس درمنه به عنوان یک پوشش جدید به‌طور واضحی اثرات رسیدگی و پیری بر گوجه‌گیلاسی را به تاخیر انداخته و کیفیت نگهداری پس‌از برداشت میوه‌ها را بهبود می‌بخشد.}, keywords_fa = {گوجه‌گیلاسی,عمر نگهداری,پوشش,اسانس}, url = {https://jift.irost.ir/article_580.html}, eprint = {https://jift.irost.ir/article_580_97ffc648ca8aa6b0a3cc08f4c82b71da.pdf} }
