In this study, to drying and increased shelf life of the product, infrared radiation (IR) method was used. Thus the effects of infrared lamp power (150, 250 and 375 watts), the distance of sample from lamp (5, 10, 15 and 20 cm), samples thickness (0.5 and 1 cm) and time of 120 minute on drying of button mushroom were examined. The results of infrared drying of button mushroom showed that with increasing in lamp power and decreases in sample distance from the heat source, the drying rate increases. With increase in infrared power from 150 to 375 watts, drying rate 104.9% increased. By reducing the sample thickness from 1 to 0.5 cm, drying rate 15.8% increased. By increasing in drying process time, the samples weight loss was increased. In this study also, process modeling was done with the genetic algorithm–artificial neural network (GA-ANN) method with 4 inputs (power and lamp distance, sample thickness and drying time) and 1 output for prediction of weight reduction. The GA-ANN modeling results showed a network with 11 neurons in one hidden layer with using hyperbolic tangent activation function can be well predict the weight loss in button mushroom drying by infrared system (R=0.99). Sensitivity analysis results by optimum ANN showed the infrared lamp distance from mushroom slides was the most sensitive factor to controlling the weight loss of samples.}, keywords = {button mushroom,Genetic algorithm,Infrared,prediction,Sensitivity analysis}, title_fa = {فرآیند خشک کردن قارچ دکمه ای توسط سامانه مادون قرمز}, abstract_fa = {قارچ دکمه‌ای (Agaricus bisporus) به عنوان یک ماده غذایی با ارزش تغذیه‌ای بالا، بین 25 گونه قارچ خوراکی، حدود 40٪ از سهم بازار را به خود اختصاص داده است. در این مطالعه جهت خشک کردن و افزایش زمان ماندگاری این محصول، از روش پرتودهی مادون قرمز (IR) استفاده گردید. لذا اثر توان لامپ مادون قرمز (150، 250 و 375 وات)، فاصله نمونه از لامپ (5، 10، 15 و 20 سانتی متر)، ضخامت نمونه ها (5/0 و 1 سانتی متر) و در مدت زمان 120 دقیقه بر خشک کردن قارچ دکمه ای مورد بررسی قرار گرفت. نتایج خشک کردن قارچ دکمه ای به روش مادون قرمز نشان داد با افزایش توان لامپ و کاهش فاصله نمونه ها از منبع حرارتی، سرعت خشک کردن افزایش می یابد. با افزایش توان لامپ مادون قرمز از 150 به 375 وات، سرعت خشک شدن 9/104 درصد افزایش یافت. با کاهش ضخامت نمونه ها از 1به 5/0 سانتی متر، سرعت خشک شدن 8/15 درصد افزایش یافت. با افزایش زمان فرآیند خشک شدن، مقدار کاهش وزن نمونه ها افزایش یافت. در این پژوهش همچنین مدل سازی فرآیند به روش الگوریتم ژنتیک - شبکه عصبی مصنوعی با 4 ورودی (توان، فاصله لامپ، ضخامت نمونه و زمان خشک کردن) و 1 خروجی جهت پیشگویی کاهش وزن انجام شد. نتایج مدل سازی به روش الگوریتم ژنتیک - شبکه عصبی مصنوعی نشان داد شبکه ای با تعداد 11 نرون در یک لایه پنهان و با استفاده از تابع فعال سازی تانژانت هیپربولیک می توان به خوبی درصد کاهش وزن در طی فرآیند خشک کردن قارچ دکمه ای به روش مادون قرمز را پیشگویی نمود (99/0R=). نتایج آنالیز حساسیت توسط شبکه عصبی بهینه نشان داد که فاصله لامپ مادون قرمز از ورقه های قارچ به عنوان موثرترین عامل در کنترل کاهش وزن نمونه ها می باشد.}, keywords_fa = {الگوریتم ژنتیک,آنالیز حساسیت,پیشگویی,قارچ دکمه ای,مادون قرمز}, url = {https://jift.irost.ir/article_202.html}, eprint = {https://jift.irost.ir/article_202_808058554c0b5be79afc27da61a9065a.pdf} }
